Abstract The project addressess the low innovation activity of the European distillery sector and more generally that within European agro-food cooperatives. Within the project three European distilleries aim to strengthen their competitive position through the extraction of new products from wine residues, an approach that will contribute to their sustainable and competitive growth. The consortium is formed from three high-tech distilleries (two French and one Spanish) that are very interested in innovation and creation of new business opportunities, with a Spanish technological institute that will contribute to the non-technical (R&D) aspects of the project. The project has both a demonstration component (technical issues) and a R&D component (non-technical issues). These have the following objectives:
Demonstration component.
For the demonstration component, the main technical works have been divided into two workpackages covering technology transfer (colouring extraction technology supply and tartrate technology supply) and technology assimilation (starting and fine-tuning of the two extraction plants, fine tuning of colouring storage and conservation and validation in a second season). In addition, an additional workpackages cover IPR management and diffusion of the project results to target markets.
R&D component.
For the R&D component, all works are included in the workpackage "Integrated Management System", that will be lead by the technological institute. A new methodology for the integration of management systems, specially addressed to distilleries, is going to be developed and implemented in the three distilleries. This innovative system will introduce important advances for the SME industrial partners.
