ECLAIR Programme Cluster III - Carbohydrates

There are eleven projects in this cluster. Five of them deal with the extraction of carbohydrates from different crops, the remaining six deal with carbohydrate processing by fermentation and sugar conversion processes, and with research into particular carbohydrates of economic interest.
